Cajun shrimp pasta
So long as you use quality ingredients with this one you can’t go wrong. Dead simple and only takes about 25 minutes. Feeds four.
Ingredients:
-500g (about 1 lb) large shrimp
-225g (8 oz) dry pasta-250mL (1 cup) chicken broth
-250mL (1 cup) whipping cream
-50g (1/2 cup) freshly grated Parmesan
-2 tbsp Cajun spice
-2 tbsp flour-2 tbsp butter-Splash of olive oil
-Salt, pepper, addition Cajun spice to taste
-A couple green onions, thinly sliced
Method:
1. In a bowl, toss shrimp with flour and Cajun spice to coat.
2. Add butter and oil to a deep skillet over medium heat, then fry the shrimp for a couple of minutes on each side. Set aside, but keep the skillet and residual oil on the burner.
3. In the same skillet, add chicken broth and whipping cream and whisk to combine. Grind in some salt and pepper, and shake in a little more Cajun spice if you want a bit of an additional kick. Add Parmesan and whisk. Let simmer five to seven minutes.
4. Meanwhile, cook and drain the pasta and transfer it to a serving dish.
5. Pour the cream sauce over the pasta, then drop in the shrimp. Garnish with green onions and serve!
