I didn't have Nutmeg and Cloves, and also used 50g homemade cream cheese which was 138kcal. I added walnuts and dates inside the cake. For the cream cheese frosting, I didn't have Powdered Erythritol, so I just used a 0-calorie sweetener with a drop of vanilla. The whole cake was 543 calories with the cream cheese frosting, walnuts, and dates included.

Carrot Cake Dry Ingredients

  • 40g All-Purpose Flour
  • 15.5g Vanilla Protein Powder
  • 8g Granulated Sugar Substitute (I used monkfruit sweetener with erythritol)
  • 2g Baking Powder
  • 0.6g Cinnamon
  • 0.6g Ginger
  • 0.3g Kosher Salt

Carrot Cake Wet Ingredients

  • 1 large Egg (50g)
  • 60g Unsweetened Apple Sauce
  • 25g Carrots, finely grated
  • 0.2 teaspoon Vanilla Extract

For the Cream Cheese Frosting

  • 32g Fat-Free Cream Cheese
  • 12g Powdered Erythritol
  • 10g Chopped Walnuts, optional
