I'm on day 2 of making crawfish bisque for Father's ather's Day. On Mother's Day we boiled crawfish and made stock and cleaned 80 heads for stuffing. Well today was the day.

Crawfish bisque is the pinnacle of Cajun cooking. It takes 3 days to make this dish but it is worth it.
Day one is a crawfish boil. As you are eating you set aside the largest crawfish heads. When the party winds down you peel any remaining tails and save the shells. You pop the top off the crawfish heads and put the rest with the shells.
After the party place the shells and heads in a large pot with a gallon of water and mirepoix. Bring it to a boil and simmer for a half hour. Strain, package and freeze.
