Mediterranean chicken pita pockets with garlic yogurt sauce
Grilled chicken
2 lb boneless skinless chicken breast
1 tbsp paprika powder
2 tbsp freshly minced garlic
1 tbsp cumin powder
1 tbsp coriander powder
2 tbsp lemon juice
Salt and pepper to taste
1 tbsp red chili flakes
2 tbsp olive oil
Yogurt Sauce
1/2 cup plain yogurt
4 tbsp mayonnaise
2 cloves garlic pressed
1/4 tsp ground cumin
2 tbsp freshly squeezed lemon juice
salt/pepper to taste
Spicy garlic mayo :
1/2 cup mayonnaise
2 tbsp chopped jalapeños
1 tbsp Sambal oelek sauce ( or you can use any chili sauce + 1/2 tbsp red chili flakes)
1 tbsp fresh garlic finely minced
Salt to taste
1 tbsp black pepper
1 tbsp lemon juice
To Serve
6 pita pockets
Yogurt sauce
Tomato cucumber salad
Spicy sauce
Sumac fries
Grilled chicken
Method:
For the chicken : Combine the marinade ingredients in a large mixing bowl Marinate the chicken in the spice mix for at least of 1 hour.
Preheat the grill to 450 degrees F. Cook the chicken on the preheated grill for 5 minutes per side or until cooked through.
Once cooked cut the chicken into strips and serve warm.
For the spicy garlic mayonnaise: To make the spicy sauce, combine all the ingredients in the medium bowl and mix. Cover and put in the fridge until needed.
For the yogurt sauce: To make the yogurt sauce, combine all the ingredients in the medium bowl and mix. Cover and put in the fridge until needed.
Serve warm with sumac fries and salad.
