Give your steak night an Italian twist with salsa verde and sides of capsicum & broccoli rabe.
Here’s my T-Bone steak recipe:
1. Bring the steak to room temperature and pat dry. Season well with kosher salt.
2. Heat a cast-iron skillet over high heat until hot.
3. Add a small amount of vegetable oil and sear the steak for 3-4 minutes on each side.
4. Add butter, garlic, and herbs (rosemary, sage or thyme). Baste the steak with the melted butter for 1-2 minutes.
5. Let the steak rest for 5-10 minutes before slicing against the grain.
6. Serve with kosher salt & salsa verde (basil, parsley, garlic, anchovies, capers, olive oil, lemon, chilli, salt).
