Ingredients:
For the chicken shawarma:
1 lb (450g) chicken thighs, boneless and skinless
1/2 cup Greek yogurt
3 tablespoons lemon juice
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Salt and pepper to taste
For the spicy tahini sauce:
1/2 cup tahini
1/4 cup water (more as needed)
2 tablespoons lemon juice
1 clove garlic, minced
1 tablespoon harissa paste (or to taste)
Salt to taste
For serving:
Warm pita bread
Pickled jalapeños
Shredded lettuce
Instructions:
Marinate the chicken:
In a large bowl, combine Greek yogurt, lemon juice, minced garlic, olive oil, cayenne pepper, paprika, cumin, cinnamon, salt, and pepper.
Add the chicken thighs to the marinade, ensuring all pieces are well coated.
Cover and refrigerate for at least 1 hour, or overnight for best flavor.
Prepare the spicy tahini sauce:
In a medium bowl, whisk together tahini, water, lemon juice, minced garlic, harissa paste, and salt until smooth. Adjust the consistency with additional water if needed.
Cook the chicken:
Preheat your grill or oven to medium-high heat.
If grilling, cook the chicken thighs for about 5-7 minutes per side, or until cooked through and slightly charred.
If roasting, preheat the oven to 400°F (200°C) and bake the chicken on a lined baking sheet for about 25-30 minutes, or until cooked through and slightly charred.
Serve:
Warm the pita bread in the oven or microwave.
Spread a generous amount of spicy tahini sauce on each piece of pita bread.
Slice the cooked chicken and place it on the pita bread.
Top with pickled jalapeños and shredded lettuce.
Wrap the pita bread around the filling to form a shawarma wrap.
