Here is the recipe:
2-1/2 pounds bone-in chicken thighs
1-1/4 teaspoons pepper, divided
1/2 teaspoon salt
1 large onion, chopped
1 garlic clove, minced
10 cups chicken stock
4 celery ribs, chopped
4 medium carrots, chopped
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
3 cups egg noodles (about 8 ounces)
– cut up veggies
– smoke chicken and veggies
– put chicken stock, seasonings, cut up smoked chicken and veggie into a pot and simmer for 30 minutes.
– cook egg noodles. Combine noodles and soup for serving.

so every so often I see something on the internet that I got to do right away and I just feed it into the show and I blow everything else off that’s this recipe I don’t know what hit me about this recipe somebody asked in one of the smoking forums the meat smoking forums can you is anybody ever like smoked the chicken and smoked all the vegetables before making chicken noodle soup and I’m like hmm that might be interesting to do so I immediately ran out and I bought me some chicken and and all this stuff to make chicken little soup and I’m gonna try it I’m gonna take you outside we’re gonna put all the chicken out on the on the grill we’re gonna smoke it we’re gonna smoke the vegetables it’s gonna be awesome come on in close I’ll show you what I’m doing yes I know that’s a lot of chicken not using it all for the soup I always like to make extra food so that we can have it for more than one meal so some of this chicken is gonna be smoked for the soup I’m gonna peel the skin off so that the smoke penetrates the meat better I’ve got onion celery and carrots we’re gonna put that in this basket so we give small group vegetables at the same time okay guys so I got my smoking tube right there gonna light that up the chicken right there my vegetables right there let’s get this thing started they were doing 265 I don’t know why juicy five doesn’t matter oh it’s smoking good those clothes are off there we go all right we’ll see you a little bit guys okay so the vegetables been smoked I’m gonna cut up the celery now into pieces the carrots already cut up into pieces little dried out I need to still look pretty good I’m gonna dice everything up and get it ready for the pot of chicken broth so beautiful it’s smoked that means so good the meats still smoking so this one I’m using for the soup I have all the other chicken on the smoker because that that smoking tube was still going so I killed the heat and I’m just letting me get more and more flavor into the meat but right now we’re gonna start breaking this up let this rest a bit first let it cool you don’t want to dry out the chicken so let it rest even dark me so people ask me all the time what’s the difference mean chicken stock and chicken broth I use chicken stock because it also has vegetable flavors in the stock chicken broth is literally just chicken broth so let’s open this up put in our all over our chicken stock a little bit of salt here’s some black pepper do a little oregano a little bit of thyme a little bit garlic so now I’m gonna put in our veggies there’s some celery there’s some carrots put it somewhere boy I chopped up onion stir it all up the last piece of the puzzle obviously chopped up chicken that’s been smoked if you feel any hard pieces don’t let them go in put them off the side you want all the tender goodness with that hickory smoke flavor running right through it you’re gonna bring this to a boil first then we’re gonna simmer it okay so the broth is done I got boiling water here because we’re going to use our extra wide egg noodles okay so we’re gonna put that in the boiling water we’re gonna cook these and then meet me right here with a bowl and a hungry tummy because we’re gonna put these two together and have the most amazing chicken little soup I’m so excited okay before we make our soup I just want to look at the broth and look how rich it is chicken little soup is usually a light yellow but look at this this smoke and the herbs we put in there it’s like a dark it’s kind of a nice dark color the aroma throughout the house is amazing Tammy came out of her office upstairs just like it smells great alright he start off with a little bit of pasta not too much just some noodles no soup see that first of all I just wanted to see how beautiful that looks without the bra and we’re gonna bring the broth over that’s what I’m talking about this is gonna make anybody cheer it in a minute if you’re not feeling well just looking for some comfort food some of those cold days are hanging around still around the u.s. so let’s give this a try you guys ready here we go that that hickory smoke it smells so good mmm you know what’s really a kicker in this is the oregano try the oregano I might throw basil in again maybe some parsley Italian parsley that’d be awesome how do you make your chicken noodle soup and you guys gonna try this are you gonna smoke all your stuff and then make a soup you got to try it it’s amazing home run I’ll see on the next episode take care go back

All looked good until the noodles. Why waste all that flavor and dirty another pot? Dump the noodles into the pot of broth with chicken and vegetables and simmer until done. Noodles will absorb the flavors and be so much better. Then you have chicken noodle soup!
I love the smoked chicken soup idea! I would need to use gluten free noodles, but this looks and sounds so good! I've never smoked anything, but would love to try this. I like to use leftover roasted chicken for my soup!

Why not just put liquid smoke ?
try adding some chipotle to your stock – the smokiness will compliment the flavours of the smoked chicken and veggies and will add a liitle heat kick as well. I do this and sprinkle some shredded cheese on top after placing the soup in a serving bowl. delicious!

Jack, you had me worried in the beginning. Showing that smoke tube on the grate, I thought to myself, "Why is he using a gas grille and smoke tube, when he owns 2 pellet smokers". By the way, I bought one of those tubes after your review, and it works like a charm on my gas grille for quick smokes, without having to fire up my pellet grille.
Missed a trick: should have smoked some garlic cloves as well, instead of adding garlic powder.
That sounds like a great idea. I never even thought of that. what's not to love. I bet it would also be good with chicken and wild rice soup. Next time try doing it with beef to make beef and barley soup.

Lol now odd question could you smoke the broth/stock? I know its a liquid but could it work?
Your soup looks great the only thing I would like to different would be to put so chicken with bones in my instant pot with water. So I could have bone broth with the other items. Now could be an excellent soup.
A few years ago i had leftover smoked turkey and turned it into turkey noodle, it was amazing. Never thought about smoking the veggies also.

No doubt this is good. I think I would hold out some of my fresh veggies to simmer in my broth (while some are also smoking) because the whole concept of using the mirepoix is that you're leaching the flavor out of them to flavor and enhance your broth. Best of both worlds, in other words.

I make my chicken noodle soup with my homemade egg noodles! Matter of fact I never purchase store bought noodles any more.

I have been a subscriber for a few years now and am glad you stood firm on not selling a share in your youtube channel. To question your character when they dont know you is a very low thing to do. Looks yummy. I will use the left over chicken from a Walmart roasted chicken for my soup. I will also put the noodles into the broth for the last 7-10 minutes. After I strip the meat off the bones I'll make stock from the bones and skin if I'm feeling it. If not, it'll be Swanson chicken broth or stock.

According to the Food Network: "Chicken stock tends to be made more from bony parts, whereas chicken broth is made more out of meat. Chicken stock tends to have a fuller mouth feel and richer flavor, due to the gelatin released by long-simmering bones.
Canned low-sodium chicken broth is the busy home-cook's best friend. If you've got an extra few minutes, enhance its flavor by adding any combination of the following and simmering for as long as you can: carrots, onions, leeks, celery, fennel, parsley, bay leaf, black peppercorns, or garlic. That'll help the flavor tremendously.
Enriching store-bought broth still won't give you the full stock experience, but unless you're making something like chicken noodle soup, where you really do want the stocky mouth feel, it's a great timesaver."
The brand of chicken stock Jack is using, Kitchen Basics, contains: chicken stock, natural chicken flavor, cooked vegetables (celery, carrot, onion), honey, spice and herbs (black pepper, bay leaf, thyme), and natural flavor.
Note that the Food Network says, "TENDS to be", which means the rules are not hard and fast.

Great video jack! Just an FYI Stock is made from a carcass and vegetable boil. Broth is made from primarily just meat and some seasonings. That’s why stock has a richer flavor, because you get the release of the gelatin from the bones. Stock is usually simmered a lot longer too, to really get all of those rich flavors developed. ☺️

I've done this when making chili. Smoke a chuck roast and the veg for 3 hours or so then cut and trim the meat and make your chili by your favorite method. I've won chili cookoffs with this technique and always get raves. Will have to try the chicken soup idea
