We aren’t vegetarian or vegan but like to mix it up, plus those Impossible ‘meatballs’ were on sale a few weeks ago (no limit on bags of them!). I also hate when you’re eating an egg salad sando, and it’s all the same texture; I decided to do those layered boxes and eat them with crackers to break it up.
Meatless subs
– deli rolls hollowed out a bit
– jar pasta sauce 3 tablespoons on bottom, 1.5 on the meatballs before the peppers
– sautéed onions
– sautéed mushrooms
– 3 impossible meatballs/sub
– sautéed peppers
Eating these with steamed broccoli and water chestnuts dressed with some watered down oyster sauce
Egg salad boxes
– 6 eggs, 12 min boil, smash the yolks first in Japanese mayo, then chop up your whites and add the cheaper mayo, salt, white pepper, half teaspoon onion powder (first layer in Tupperware)
– small head of iceberg, shredded, and on top of egg salad
– crackers
Eating these with steamed bok choy with ginger and watered down oyster sauce

We are also meat eaters but used to take a break from it once a year and go vegetarian for a few months. Also, you gotta take advantage of sales in this economy!
Everything sounds and looks great! I’m a little worried how the sandwiches will fare in the fridge for a few days. Probably best to keep the fillings separate from the bread until its time to eat. Its gonna be soggy but probably still tasty!
Do you put the bok choy over the egg salad?
