Tori Paitan Soup, Shio Tare, Roasted Onion and Chilli Aroma Oil, Ajitama, Slow Roast Roma Tomato, Shallot, Pak Choy, Smoked Pork Belly Chashu.
Took all the elements from a standard Chashu recipe, marinated a belly in it for two days, pulled it out, rolled it and smoked it low over cherry wood til probing tender.
That little hint of smoke complemented the bowl super well. Might be my best one yet.
Standard chicken Paitan, which I then blended with Kombu/Shiitake Dashi after straining.
