I used zucchini, summer squash, pepper, eggplant, and onions for this grilled salad, but you can add the vegetables of your choice. This is a great recipe to make if you have veggies that need to be cooked before they go uneaten! This is a great recipe to eliminate food waste.
this recipe is great if you have a lot of vegetables don’t know what to do um which is what I have going on or you can just plan to do it because it’s really a cool recipe and great to eat I have to tell you I’ve done this recipe with kids classes and they eat every bite towards me because you know they don’t always like to eat vegetables in any case I sliced about half inch thick um I have some yellow squash zucchini an eggplant isn’t that color color and some peppers but you can use whatever else you like you can make your own dressing I’m just using a plain old bottle of Caesar dressing and I’m going to give them a little bit of dressing layer them up and then I’m going to mix them all around make sure they get combed nicely because what we’re going to do is give a little flavor let them sit for a little bit absorb dressing flavors and then I’m going to grill these veggies and they are going to go on top of some lettuce for a wonderful grilled veggie salad so it’s healthy it could be a full meal you can add grilled chicken if you need some extra protein and does not make your kitchen uh hot in the summer to Great nutrients I’m using Romaine you can use any kind of lettuce that you want and I’m just chopping this and I purchased the hearts you can see it’s like flap of an elbows in place um I might use the other two heads for a salad wrap all right it’s just getting whoops it’s right onto the plate it’s the base but when the vegetables are going to go on vegetables have been sitting only about five minutes with the dressing cumbersome lettuce and I’m going to lunch through pretty show you what I did there you go so that’s my base and then we can add other non-grilled vegetables too okay these guys have been on about seven minutes or so they’re ready to give them a flip all right and flips put Char on them maybe I got over a little overboard on that one but I was cutting up the tomatoes and then when they’re coming up I’m gonna put them actually I’m going to put them back in the bowl where there’s a little bit of dressing for when they were marinating and I’m gonna have to chop them up and put them on the sandwich so I took the vegetables off the grill it was like Grand Central Station in this house so you didn’t get to see me chop them I chopped them they are in that size you can put full sizes on here um obviously that would work take them throw them on the top of my lettuce I did put some I had some cherry tomatoes yes regular tomatoes that I put on and this can be served from temperature which is I know you’re waiting to see the whole thing let’s get a camera crew so that I think it’s a little things at one time and I did slice up some red onion okay let me wash my hands and then I’ll show you all right look at how beautiful that is so stunning taking out of any juices making sure because remember it’s not like it’s me but with meat we can’t take our marinade and our extra juices and just put it on our salad again with vegetables take those taking my original extra dressing and then you can add more dressing and yes we need it but we’re not going to waste before I serve it I’ll probably put on some shaved Parmesan was trying to get away and maybe some croutons
