eating my way around the world this is couscous with lamb from Algeria I started by adding some oil into a pan then adding some big chunks of onion I added some lamb but before I let them fully cook I removed them as well as some of the onions from the pan I replaced it with chicken turning occasionally I next added some water as well as some cumin turmeric and coriander I let that come to a boil before adding some carrots and potatoes and while that was cooking I prepared Ras Al hanut a spice blend made up of cumin Ginger turmeric black pepper cinnamon white pepper coriander cayenne pepper nutmeg and cloves just give that a quick mix and you have the spice equivalent of gold I added the mix to My Pan along with some tomato paste and that was when I realized I forgot to add my radishes earlier I added some cucumber chickpeas and parsley which almost made the pan overflow final step was to plate and dig in truly delicious Algeria gets 7.5 out of 10

  1. But… but the most important part is how you cook the couscous itself 🥺🥺💔

    It goes through several rounds of rehydration, buttering, sieving, steaming in a special kind of pot called a couscoussier which is basically a big pot with a steamer on top. You cook the stew in the bottom part so the couscous is steamed with the deliciously fragrant emanations from the stew❤️
    It’s like eating fluffy heaven.

    my mama also add raisins that become all plump and delicious after all this steaming, it’s a delight.

    In all seriousness, thank you for talking about my favorite dish, my number one childhood memory. Cutting the veggies, sieving the couscous with my mum… and of course everyone devouring it afterwards 😈
    Just a little thing : it’s not an algerian dish per say, it is a Berber dish that was invented between algeria and Morocco.
    (Btw, note to my friends from Maghreb : I am French, sorry in advance if I used improper terminology ^^)
