Soak them. Scrape them. Take them outside and use the hose and scrape some more

Put it an oven and just heat it fuck up. It’s quite the process ngl, had a chef get mad at how all the grills were turbo carbonated because the cooks just threw it in the dishpit, took him like 6 hours to clean it all.

Do you not have the rational cleaning tablets? Rationals clean themselves

If this is a normal occurrence, I would opt for an enzymatic hot soak tank. It can be used for anything in the kitchen that needs to be removed of carbon and grease. Save you guys tons of labor.

You can get it super hot and scrape with a wire brush and power wash it. OR you can soak it in some heavy duty degreaser over night then attack it with a wire brush and a power washer

Whatever option is chosen.. I’d highly recommend the cleaning tabs designed for these ovens. Nearly zero work to keep your oven looking brand new every day.

Rational self cleaning is pretty wild stuff so I’d try just running it through a cycle but that does look pretty baked on so it might need a full decarb (which I’m guessing you don’t have, I’m sure there’s services available though)

The build up is from food sugars and fats. Best way is to get the flame high as it goes, close the lid and allow the grill to burn off. After it flames out, brush with a heavy wire brush.

If the grates for your combi look like this, you absolutely need to find the air filter for the computer system and clean it. They are replaceable and I can only assume you will need a new one. Computer in the combi goes out and you might as well throw it in the dumpster, they are thousands of dollars to fix.
