    Oof. Process / Destem those immediately. Hopefully not too many have gone to rot.

    I always de-stem and slice in half them vacuum seal in portions for the freezer. I wouldn’t be surprised if half of those are brown on the inside.

    I like to slice them up and put them in a jar with 2/3 fish sauce and 1/3 rice vinegar.
