This is so easy and you can make it as spicy as you want it. 100% better than any store bought junk as it used only a few ingredients and is mostly cheese and milk! The secret lies in the sodium citrate which is what makes american cheese so meltable (if thats a word). With sodium citrate you don’t need the flour/milk roux which makes the sauce grainy.

Ingredients
300g cheese
250g milk
9g sodium citrate
1 tsp salt
1 tsp habanero powder (small amount goes a long way as powder is punchy!)
1 tsp garlic powder
1 tsp Gochujang paste (for color and umami)
