Seasoned with Lowry's, MSG, coarse black pepper, and granulated garlic, and left it to dry brine over night. I threw a chunk of oak in for the reverse sear. I got that grill screaming hot during the rest and it did get a little darker than I wanted during the sear, so I was worried. But it ended up a perfect 135 internal, and coast to coast pink. Surprisingly although it was dark, the outside did not taste burned. It had a great crust!
