i normally weigh every ingredient to the gram but i had a shit day and just wanted food on the table lol. so i approximated a little with the veggies but whatever, they’re veggies. 🤷‍♀️

8 cherry tomatoes
1/4c diced bell pepper
1/4c chopped broccoli
1/4c red onion
1/4c sliced carrot
1 garlic clove
0.5tsp EVOO tossed w veggies
125g salmon
seasonings: harissa powder, garlic powder, pepper, salt, za’atar, oregano, parsley
^ all of the above roasted at 375. veggies for 10 mins, then made space in the middle of the sheet pan for the salmon, used a probe thermometer and roasted until the fish hit 125F. rested for 7-8 min.

lemon wedge
75g cooked jasmine rice with 1tsp spicy harissa mixed in
45g “tzatziki” (nonfat greek yogurt, lemon juice, lemon zest, dried dill, salt, pepper, garlic powder)
1tbsp chopped fresh parsley to top!
