Just did my first trip of Flat Iron Steaks.

Any recommendations for how to cook them on a pellet smoker/grill?

Here is what I ended up doing:
Seasoned with Himalayan pink salt, course black pepper, and "a Cajun life" brand Blackening rub. Let it come to room temp whole seasoned.
Cooked on a Traeger at 450 until it was rare – medium rare (center cuts were rare for me, and the rest was medium rare for my wife and kids). Then let them rest for 10min.

Overall we were extremely surprised at how good it was. For personal preference I would rank it above a New York Strip and a bit below a ribeye.

Looking forward to different ideas of how to grill them in the future 😁

    Looks great to me. I just ate a flat iron a few minutes ago. It’s a great cut.

    It looks a little blue in the middle, maybe keep it on indirect a little longer to get the middle fully up to temp (unless you prefer it blue, that’s ok if you do)

    If you like your steak rare, it’s perfect.

    Pick up a box of diamond kosher salt for more even coating and dry brine it for a few hours/overnight beforehand to let that seasoning fully penetrate a thicker cut of meat like that.

    Then hit it with the pepper/flavored seasonings shortly before cooking it.

    Don’t close your grill next time, get a little more sear on it. Other then that it’s beautiful.
