have you ever tasted green aarini balls filled with sundried tomato and mozzarella well I’m going to show you how to make it here so firstly make your normal white risoto by sweating off the safo of onion garlic and celery and butter and oil once that’s softened add the risoto rice and then add your wine and then start to slowly feed in ladles of your stock whether that’s chicken fish or vegetable so in between lading your stock into the risoto take 180 g of mixed seasonal greens and pop them in into a food processor or liquidizer and then this Rich Vivid green liquid can be poured into your Roto as you finish cooking it when you cut open you’ll see that they’ve got the most amazing Green Middle encasing some Oozy mozzarella and the red pesto and the flavors together are so delicious sort of you get the earthiness of the greens risoto with the sweet sundried tomato pesto and then the rich mozzarella they’re actually really delicious
