Inspired by my friend Gail I made this pasta several times before but this time I added a little bit more tomatoes and cheese and it made all the difference. This salad is perfect for lunch, dinner, or a get together picnic party. Serve with your favorite glass of wine and enjoy!

To make this dish you need the following:
1lb. fresh sliced mushrooms
2 cups of grape or cherry tomatoes (sliced in half)
4 cloves garlic, thinly sliced
2 teaspoon dried oregano, crushed
3 tablespoon Olive oil (divided)
16 oz. (1 lbs) dried whole grain pasta
2 tablespoons white wine vinegar
½ teaspoon cracked black pepper
15 oz. (1 can) cannellini beans, rinsed and drained
½ cup chopped fresh basil
2 oz. Parmesan cheese
Salt to taste

Directions:
-Preheat oven to 450 F and have an 18 x 12-inch baking pan lined with foil ready.
-Clean and slice the mushrooms with tomatoes, sprinkle with chopped garlic, oregano, and drizzle with 1 spoon of olive oil. Roast 25 to 30 minutes.
-Cook the pasta according to package directions and drain (keeping some liquid).
-In a large bowl season the pasta with 2 spoons of olive oil, 2 spoons of vinegar, pepper, salt, mix and add roasted mushrooms with tomatoes, cannelloni, fresh basil, and Parmesan.
-Mix everything gently to combine.
-Serve with additional basil and cheese if desired. Enjoy!

welcome to Maria’s Kitchen where we are experimenting and practicing with healthy delicious and nutritious meals prepared with Whole Foods let’s get started today we are making roasted mushrooms pasta salad are you ready let’s get started first we going to clean the mushrooms right from the soil don’t wash them just clean them chop the G garlic four cloves I’m going to cut the tomatoes in a half drizzle with olive oil and bake in the oven roast them for 25 30 minutes okay let’s clean the mushrooms first to clean the mushroom just wipe the dirt the soil do not wash them because they’re going to soak the water and water is the enemy of the mushrooms because they really absorb lots of liquid so you want to keep them just like this okay okay slce the garlic four cloves and we’re going to mix with the mushrooms and the cherry tomatoes roast them in the oven okay okay let’s slice the mushrooms so just cut them in a half and then just slice them like this okay very nice let me tell you that’s a lot of mushrooms okay let’s get keep going keep going okay let’s slice the tomatoes in half and we’re going to mix with with the mushrooms seasoned and we’re going to bake them roast them in the oven mix gently mixing the mushrooms with the tomatoes with the garlic and the spices right perfect oven is ready so let’s put this in okay ready okay 450 for 25 30 minutes beautiful hey guys let’s check this out our mushrooms and tomatoes are roasting 10 minutes already so we’re going to keep them for another 15 minutes smells so good M this is going to be yummy okay so we’re going to cook the pasta we’re using pen we got here okay it’s one pound of pasta okay water is boiling I salted the water one pound 14 minutes let’s mix with something do have a sp okay good let’s this cook for 10 14 minutes okay guys check this out pasta is simmering almost done and we’re going to remove mushrooms and cherry tomatoes are done so we’re going to cook them down for a few minutes and mix with the pasta can’t wait smells so good M yummy okay guys we’re going to season the pasta with fresh basil there’s nothing better than fresh delicious smells so good okay so just fold like this with knife and slice it love basil you can add to so many dishes all the pasta and cheeses sandwiches salads that’s it have a cup mixing with the pasta when the pasta is ready okay guys pasta is ready we’re going to drain a little bit leave some liquids okay because we want the pasta to be soft very nice check this out we’re going to cool a little bit and mix with the mushrooms and cherry tomatoes season with the Bas so we’re going to put the beans cheese it’s going to be yummy guys can’t wait okay guys we mixing the pasta with olive oil two spoons vinegar white wine vinegar two spoons okay teaspoon of pepper a little bit of salt not going to do too much because we’re going to still use cheese mix gently with the seasonings cool down for a few minutes before you add the mushrooms with the cherry tomatoes the beans and basil with cheese guys we’re mixing with the mushrooms and cherry tomatoes so the mushrooms cool down scrub it we need every single one M yummy look at this okay guys we adding the beans so one can of beans small can half a cup of fresh basil this is going to be yummy delicious can’t wait and last ingredients parmesan so we’re going to grate parmesan how much about 2 o 2 oz okay just like that we’re going to mix this together it’s going to be yummy if you have ready shave you can do that otherwise you can do by yourself see those little pieces tiny small it’s fine it’s going to melt and it’s going to be yummy that’s about perfect I think that’s enough what do you think doesn’t look nice we’re going to mix and eat M guys check this out finally everything together we’re mixing so we added the beans canini beans baso and the cheese and gently mix together this is going to be yummy and delicious perfect for dinner for getting together for a picnic for a snacking for a lunch m i can eat the whole B myself look at this look at this delicious guys check this out nothing better than homemade delicious roasted mushrooms with canini cherry tomatoes basil and parmesan pasta let’s try wow basil with roasted mushrooms give extra flavor M glass of wine would be nice B Appetit enjoy
