






My family and I thought it was pretty good. Started with a choice, now feeling more confident to smoke the Prime in the freezer.
12 hr 20 min smoke. 11 hour rest. I think I rendered all the fat, didn't see any yellow spots. Did use smoked wagyu tallow to put on the meat side when it came to wrap time.
Definitely wasn't dry, which was the goal.
