We had a BBQ the other day. How did I do? Smoked the ribs for about 5 hours with temps ranging from 210 to 250 throughout.
Smoked ribs and sides to celebrate a Friday off of work. Not a long weekend, I had work on Saturday ๐

I’ve actually had some success with cooking a bit hotter and faster on ribs — 250-275. Nothing wrong with cooking a bit lower and slower, I have just enjoyed 3.5-4 hour cooks instead of 5-6, with extremely similar results (maybe even a tiny bit better at the higher temps.)
