    I’ve actually had some success with cooking a bit hotter and faster on ribs — 250-275. Nothing wrong with cooking a bit lower and slower, I have just enjoyed 3.5-4 hour cooks instead of 5-6, with extremely similar results (maybe even a tiny bit better at the higher temps.)
