Konjac noodles have become a staple lunch for me. This stir fry is served on my biggest plate and only has a little over 300 calories!
I find that pan frying the noodles with a bit of oil and seasonings and then letting them soak up whatever sauce I make for at least 10 min makes them taste the best.
For this recipe I finely chopped 5 garlic cloves, an inch piece of fresh ginger, half a small onion, and pan fried it all + the noodles and some salt. Then I added the veggies, soy sauce, hoisin sauce, chicken (I used the frozen Tyson chicken because I’m lazy today) add a bit of water, and let it all soak up.
I’ve never logged garlic or ginger before but wanted to include it for the recipe and I’m actually surprised they both have that many calories! I honestly thought it would be more like 5 calories each lol but the flavor is worth it.
