- David Chang's Momofuku ramen (I ate all the pretty chashu before i decided to take picture 😢), 2. Shio ramen, 3. Tonkotsu ramen (mostly like Adam Liaw's version) the tare is a seafood one and starts with a g?, but the Japanese word is lost on me at the moment, 4. Always homemade noodles, 5. Andy Ricker's Khao Soi. I know it's not technically ramen, but the amount of work to duplicate his recipe is note worthy XD 6. If you know….. you know (that's not ramen btw, I was just cranking out some egg pasta and hand cutting, I'll probably go to hell for processing italian pasta in that beast)
