🥦 Broccoli Quinoa Salad:
• 1/2 cup uncooked quinoa
• 1/4 cup slivered or sliced almonds
• 1 head broccoli
• 1 hand fresh basil

Dressing:
• 1/4 cup olive oil
• 2 tablespoons lemon juice
• 1-2 tablespoons smooth Dijon mustard
• 1 teaspoon apple cider vinegar or more lemon juice
• 1 teaspoon honey
• 2 medium cloves garlic, pressed or minced
• Salt & pepper, to taste
• Chilli flakes (optional)

🥒 Jennifer Aniston Salad:
• 1 cucumber
• 1/2 cup uncooked quinoa
• handful of each mint and parsley
• 1 can of chickpeas
• 1 red onion
• 1/2 a block of feta cheese
• Juice of one lemon
• 2 tablespoons olive oil
• Salt & pepper, to taste

🍅 Greek Salad:
• 2 handful of arugula
• 2 handful of cherry tomatoes (approx 200g)
• 1 cucumber
• handful of dill or parsley
• handful of olives
• 1 red onion
• 1/2 a block of feta cheese

Dressing:
• 2 tablespoons of joghurt
• 2 tablespoons of mustard
• 1 teaspoon honey
• 1 tablespoon of apple cider vinegar (or lemon juice)
• Salt & pepper, to taste

[Music] hi guys and welcome back to the channel so today I’m going to show you how to meal prep three salad recipes that are perfect for a healthy work lunch I just know I feel better during the work week if I eat something healthy at the same time if I don’t prepare for it it won’t happen and also I hate to think about what I want to eat every day it’s just an additional stress factor for me so this is why I really like meal prepping and especially meal prepping these three salads So today we’re going to make a broccoli kinoa salad the Tik Tok famous Jennifer Anderson salad and we’re going to make a Greek inspired salad I like these three recipes so much because they’re healthy they are keeping me satisfied until dinner so I’m not starting to get hungry in the afternoon and also they don’t make me too tired or too full after my lunch break and they stay fresh in the fridge for a long time time and Wiggly this is everything I want in a salad so let’s get into it we will start with a broccoli quinoa salad first I’m going to cook one cup quinoa with two cups of water for 15 minutes in the meantime I’ll take a/4 cup of sliced almonds and toast them without any oil in a pan until they are slightly Brown make sure to watch them carefully as they burn super super fast and it happened to me more than once now we’re going to chop the fresh basil as well as the broccoli we actually not going to cook it it will go into the salad raw therefore you have to cut it really fine you’ll see it makes quite a mess but trust the process also if you didn’t know you can actually eat the stem of the broccoli as well just make sure to remove the outer layer as this is quite bitter and then you can just chop it and put it into your salad as well last step we are making the dressing you’ll find the ingredients in the description and while you’re there please make sure to subscribe to my channel mix all the ingredients until the dressing looks similar to this a really good advice for keeping salads fresh for longer is to keep the dressing separated and only mix it when you’re ready to eat it however with this salad it’s the opposite it definitely tastes better the next day and it will last in the fridge for a few days even if the dressing is already combined let’s try it mhm it’s really good the next salad recipe was all over Tik Tok because of a rumor that Jennifer andon ate it every day on the set of friends I don’t know if this is true but the salad is really great this recipe calls for kinoa again which I think is great because I noticed it keeps me satisfied for a long time we are going to drain a can of chickies and wash all our veggies first the rest of the recipe is really simple just chopping all the ingredients and mixing them together in a bowl the main heck for keeping the salad fresh for longer in the fridge is to spoon out the seeds of the Cucumber they hold the most liquid and make most salad soggy over time this time we are not going to mix the dressing and we are really just mixing in the juice of two lemons a bit of olive oil some salt and pepper together with all the herbs and the FED cheese this salad is so flavorful it really doesn’t need anything else I just almost forgot to add the kinoa I precooked but it’s important to keep you full and satisfied at least for me this looks so good ah let’s try we are on to the last salad recipe I’m starting again with the dressing mixing together some yogurt mustard apple cider vinegar honey and then setting it aside while I’m washing and chopping the veggies another tip to keep salads fresh is to make sure to dry all the veggies after you wash them one more tip if you have leftover salad like the arugula I have here best way to make it stay fresh is actually to put it in some cotton cloth and put it in the fridge because the cotton cloth will soak up all the water and it stays fresh the longest now onto chopping I’ve spent a few weeks in grease last year and I loved it so so much and the fresh ingredients of this salad remind me of all the flavors and the summer in grease and I hope you will love it as much as I do different from the other two salads we are not going to mix but layer it starting with the dressing at the bottom then the watery veggies feta cheese and olives dill and arugula this way it’s not getting soggy but you also don’t have to use multiple containers to store it and if you’re ready to eat the salad you can just flip it around and have lunch ready in seconds thank you for watching I’m Kia and I post all kinds of thing Health work and productivity related if you like this video please make sure to subscribe to my channel and give this video a thumbs up and you probably also like this video which I will link here also don’t forget to tell me which of those recipes you’re going to try first and which one is your favorite really curious about that
