I looove kimchi and I want to make my own for the first time. I became obsessed with the vegan kimchi on my travels to Brooklyn, at Vanessa’s Dumpling House. Every time I visit, I have to have it. It has all the amazing kimchi flavours/textures, but I find this one to be a hint sweeter than the others I’m used to. Is there something different in vegan kimchi that makes it taste sweeter? Im not vegan, but I do want to try and replicate this if possible.

    It depends on your recipe. Standard kimchi’s sweetness comes from the cabbage and fruit used. The salty non-vegan ingredients (fish sauce/shrimp) counter balance the sweetness. Vegan kimchi, I would think, doesn’t have the strong salty ingredients to counter balance the sweetness.

    Sometimes the sweetness comes from the cabbage itself. There’s peak season when this is true. But sometimes the person making it, makes it sweeter than others. Each person/ family has their own recipe
