I prefer to, but I use a Weber kettle, so I start to run out of room if I’m cooking multiple things for more than a couple people.

I’ve only made meats so far on both my offset and my kettle.
I tried to make baked potatoes once and they did not turn out well, burnt yet not soft.
I put the dough for homemade hot dog buns on the kettle on a pizza stone and came back to them burnt before fully rising. I clearly need practice doing whole dinners.
I’m going to try corn (easy) and peach cobber on the smoker for 4th of July.

Of course i do. Meat of course, but also grilled vegetables on a stoneware plate, baked potatoes , mac&cheese or skewers in sauce in my cast iron skillet or pot. Or try to use a Terrakotta plant pot upsside down, put a Tortilla wrap on top for a few minutes and let it cool down to get eatable salad bowls or serve grilled veggies in it..

I find myself feeling wasteful if I use 25% or less of my grill. Because of that I’ve learned to work in things like mac’n’cheese, onions, onions & peppers, veggie skewers, corn on the cob…. Is boudin a vegetable? /s
For Christmas I got a cast iron set that came with a mini Dutch oven. This little guy has been a game changer for my grilled beans. It fits perfectly under the top rack so I can make over the top style things with meat above dripping into the pot. I’ve only made beans so far because it’s hot, but my beans are requested now! Really? Beans? Of all the things coming off my grill, beans get a podium spot. Sigh.
