
This a pretty obscure late-night sandwich popular in the eastern North Dakota cities of Fargo and Grand Forks. The most famous (and likely the original) version is made by the Red Pepper but variations can be found at several other local late-night spots

I lived in Fargo for 7 years, ate many places, I never heard of taco grinders being made there first, just a weird flex.
A few tips to get closer to RP grinder quality:
* The taco meat is made more “spreadable” by incorporating a small amount of oats into the meat. Soak the oats in the taco seasoning mixture for at least an hour, about 1/4c to 1lb of beef.
* The white sauce is extremely generic salad dressing (Sysco) salt, pepper, 2% milk, and should have the consistency of ranch dressing when made correctly.
* The “salami” is just thin sliced summer sausage.
* The hot sauce is tomato juice, cayenne, salt. It’s not great, and just about any other hot sauce is better.
* The cheese is white American, and the more generic the better. About the same texture as Kraft singles.
