
I figured this would be appreciate here! I normally caramelize halfway in a pan (~1-2 hours for 5 lbs low and slow) where I can control the heat, and then transfer to a crockpot on low with the top slightly open for 4-6 hours. I’ll then refrigerate, add to the mirepoix, homemade beef broth, etc. tomorrow morning, and then cook in the crock pot for 6-8 hours until my company comes tomorrow
