Yeah nothing wrong with this. Aranchini are just fried balls of leftover rice or rissoto. I see nothing wrong with frying up some leftover spaghetti as a comfort food.

We literally do in Italy as well. It’s called “frittatina di pasta” and it’s absolutely delicious. It’s extremely popular in Naples at least, and it’s not considered “junk food”, just on par with arancini
