Hickory chunks, 375° for 12:00. It is the best fish I’ve ever made, and I go through some sockeye when in season. A hot summer day like today, it went great over tabbouleh salad.

    Directly on the defuser? Or is there a pan in there?

    I have always cooked fish skin side down. Does this method produce better results?
