My first attempt at smoking, new to the grill but did some chicken and burgers for a little practice. This is my 3rd cook on it. Pork Barrel BBQ rub (Costco) and a pork shoulder (also Costco), KJ Big block and some applewood chips. 300F until 160 internal, wrap to 190 on the grill – about 5.5 hours cooking. Took it off but only hit about 194 at rest so I threw it back in the oven until 200. Damn MEATER wanted me to pull it off at 178 (set for 203) glad I didn’t do that! Results were amazing. I’ve only cooked shoulders in the oven up until now but holy cow the smoke flavor stands on its own even without sauce. Should have cooked a bit longer as some parts were tough to shred but we had company by then. Next time it’s sitting on the grill to 200 and if I can get some bigger wood chunks for smoke that would be great.
