First time smoking beef ribs. I think they turned out pretty damn good. 5 hour @ 225-250, mesquite lump charcoal and a whole bag of hickory chips.

    I just did two racks flat on an xl with a water pan on the indirect plate at 225 and mine took about 8.5 hours granted they were both 4 ribbers. Wrapped in butcher paper at 170 and finished off at 198. Came out pretty damn tasty, almost as good as off my Lang smoker.
