Each loaf – 400 grams of bread flour, 350 grams of water, 100 grams of whole wheat, 12 grams of salt, 100 grams of 1:1 starter.
Mixed in a stand mixer for the autolyse then dimpled in the starter and salt and stretched and folded 4-5 times, 20-30 mins in between. Then let it rise in a turned off oven with the light on for 2ish hours till doubled, shaped into batards, rested, reshaped, proofed from midnight till 2-4 pm the next day in the fridge. Baked in a dutch oven at 450 for 25 minutes, then took the lid off at 400 for another 22.
