2 of these for about 400 calories, 40g protein, 24g fiber 🤓 I use low carb tortillas and press them into a small cake pan then divide my mixture of 2 eggs + 2 egg whites, rotel tomatoes, spinach, 1/2c cottage cheese. Bake at 350 for a few minutes then top with a little shredded cheese and plain Greek yogurt or sour cream.
