At the beginning of every week I prep meals for my family to take for lunch

Chipotle chicken, with cauliflower rice and a salad. The salad container is a lot bigger than it looks thanks to the angle of the picture.

For the dressing (not pictured) I made a cilantro lime Greek yogurt sauce.
