I’d go with chicken of any kind! Make some killer grilled chicken sandwiches. I personally feel like chicken has one of the largest benefits on the grill vs in a cast iron, compared to burgers or steaks or whatever.

Marinade some chicken quarters in pickle juice overnight. Salt, pepper, garlic and grill ’em. Sauce with BBQ the last 10 mins.

Grilled wings are my favorite kind of wings, except for the very creme-de-la-creme, if you will, of expertly smoked smoked wings.
Bratwurst are next level over charcoal. Give ’em a good sear directly over the coals, but try not to let the skin burst! Throw down some halved onions and quartered red bells while you’re at it. Throwing everything in a cast iron skillet or a foil pan after the sear, with your favorite hearty beer, or hard cider, and a few pads of butter and letting it all simmer in the smokiness will net you some tasty dividends. Spicy mustard and good kraut are NOT optional lol.
Another mid summer go-to for me is a grilled (chicken, steak, shrimp) salad with homemade croutons. Grab an inexpensive French or Italian loaf, cut it into cubes, toss in a bag with a prepared mixture of olive oil, red wine vinegar, salt, pepper and plenty of fresh minced garlic. Put them on skewers and toast them lightly towards the end of your cook. Definitely one of those things you won’t be able to buy from a store again after you make them from scratch.

You should get a tin pan to dump and cook the coals in. Next time you grill, just dump the ashes. Keeps the grill super clean. Get an extra heavy duty one and you can reuse multiple times. I love kielbasa and Chicken thighs. Corn is the best on the grill. Enjoy. Almost forgot. Get a charcoal chimney to start it.
