First time grilling branzino. Saw some at Costco today and Googled a quick recipe. I was surprised how quickly it cooked! Only 7 minutes per side with a raised grille, and it came out perfect!
Stuffed with basil and lime with olive oil and shallot, 450° with a little peach wood for smoke. Grille raised to level on the Large and 7-8 minutes per side. It was incredibly delicious, even better than when I had it in a restaurant in Monterey, CA
Followed strong suggestions to clean and oil my grille, as well as the fish skin to prevent sticking, and there were thankfully no issues with releasing from the grille.
