My new favorite low calorie snack. Taste very similar to peanuts. Drain and rinse can of chickpeas. Dry them and remove any loose skins. Drizzle with a tiny bit of oil or cooking spray and season with salt and or Cajun seasoning (my fav). Bake at 425 for 20-30 minutes until crisp.
1 cup with half a tablespoon of oil: 330 calories
Considering 1 cup of peanuts is over 800 calories, it’s a good substitute for this sub

    Roasted chickpeas are great! You can flavor them in endless ways whether you like them sweet or savory.

    Couple of my own insights from roasting chickpeas

    You can use canned chickpeas or you can soak your own. Canned chickpeas you wanna wash them a couple of times because IMO they have a “taste” from the water they’re canned in. It might not be a deal breaker to you so YMMV.

    Skin them. It takes a while but removing the outermost shell/skin helps with removing any excess moisture, resulting in a crispier chickpea. It’s not necessary but your total cook time might need to be increased.

    Get them as dry as you possibly can. Pat them dry and let them air dry on paper towels.

    Roast them 3/4th of the total cook time with no seasonings on whatsoever. Only oil/cooking spray.

    You can add seasoning and give them the remaining 1/4 of cook time. I prefer to put a little oil on my chickpeas before I toss them in a bowl with my spices to make it stick better and then put them back in the oven.

    I also like to give them 10 minutes at a time where I give the pan a good shake before putting them back in. It helps me figure if they need more time to crisp up or not.

    I have tried giving my chickpeas 45 minutes on 175c (I think that’s about 345f) with the 10 minute interval cooking method after removing the shells and found them to be perfectly crispy for me.

    Also I really like seasoning with (light) soy sauce and tossing them in a bowl rather than regular salt.

    I’ve been doing mine in the air fryer lately because I find it takes less time, and it’s easier to give them a shimmy shake every once in a while to make sure they’re coated. I’m hooked on trader joe’s green goddess seasoning at the moment. I love putting them on salads for a nice crunch.
