Yes, i separate the yolk and whites after boiling and mash separately with a fork til the pieces are quite small. Add salt and kewpie mayo and put on shokupan/milk bread from an asian bakery. Make the sandwich and let it sit for at least 10 minutes to get everything to meld. I actually made this today but used a little karashi mustard i mixed with a tiny bit of water to make it easier to mix into the mayo. Added a nice sharpness.

If you’re in the US be sure to purchase the Kewpie mayo produced in Japan, not the one made in the US. They taste different.

This guy Andy has lots of down to earth and easy to follow recipe videos. I haven’t tried making the bread in this one but I did the chicken and also the egg and both were delicious!
Oh man, Friday, I really wanted an egg salad sandwich and I was just obsessing about it and I was like, ‘Man, I’m gonna make one of those.’ So Saturday, I went out and got, like, a dozen eggs and then I boiled them all and I just, I spent, I dunno, probably three hours, like three and a half hours making, you know, the mayonnaise, and the onions and paprika and, you know, the necessary accoutrement. And then, by the time I was done, I didn’t really feel like like eating it.

Oh my god! I thought I was the only one. I was in Japan once in 2019 and I made the mistake of tasting this sandwich from 7-11. I have been yearning for just one bite of that sando ever since. I have never been able to get it right at home. Sometimes I wonder if somehow having a sandwich shipped from Japan would be a good idea? But it is eggs, it will rot in a day if flying overseas.

it’s been 6 years since I visited Japan and I STILL think about these dumb sandwiches. they were so tasty. I can’t wait to try the top recipe on this thread lol
