A contemporary, gluten-free take on a classic bruschetta. This video recipe shows each step of the process & helpful tips.

Serves: 8
Ingredients:
2 medium (about 450g each) fresh eggplants
1/3 cup Woolworths Select Australian extra virgin olive oil
3 (about 160g each) fresh truss tomatoes
2 fresh spring onions, thinly sliced
2 tablespoons shredded fresh mint leaves
100g soft fetta
Woolworths Select Australian extra virgin olive oil, to serve
Woolworths Select balsamic vinegar, to serve
Method:
1. Trim ends off eggplant. Slice crossways into 1.5-2cm-thick rounds (you will need 16 slices). Brush both sides of the eggplant generously with olive oil. Season.
2. Preheat char-grill plate or large frying pan on medium heat. Char-grill eggplant slices, in batches, for 4-5 minutes each side or until lightly charred and tender. Transfer to a baking tray in a single layer.
3. Cut tomatoes into quarters and deseed. Dice the flesh. Put tomato dice into a bowl, add onions, three-quarters of mint then crumble over the feta. Season.
4. Arrange 8 rounds eggplant on platter, top each with a second round. Spoon the tomato mixture on top of warm eggplant. Top with remaining mint, drizzle with extra virgin olive oil and balsamic vinegar.
Tip 1: Select eggplant with smooth, firm, glossy, skin. They should feel heavy.
Tip 2: Don’t overload the char-grill plate with too many slices at once, if you do the eggplant is more likely to stew causing it to fall apart after cooking.
Tip 3: Use a dessert spoon to scrape the seeds from the tomato quarters.

eggplant bruschetta with tomato mint and feta this dish is a modern twist on a classic bruschetta the breads been replaced with slices of char grilled eggplant which gives it a divine smoky flavor and means it’s gluten free the ingredients are eggplant fresh spring onions tomatoes marinated feta mint and select extra-virgin olive oil to download the recipe and a full list of ingredients click below first up we’re going to trim the ends off these gorgeous eggplant and then slice them into about 8 slices each these eggplant are so beautifully perfectly right it’s really important to prepare this dish as close to serving as possible because you want the eggplant to stay gorgeous and fresh and hold its shape eggplants are reached flavoursome and fantastically versatile vegetable when choosing an eggplant it should have a smooth shiny skin and feel relatively heavy for its size the charcoal plates been heating to a medium heat I’m gonna drizzle these eggplant slices with some olive oil I’m gonna rub this oil into the eggplant slices cuz I don’t want it on the grill pan actually wanted on these so that I’d stick when I cooked them generous amount of salt and pepper straight on you never want to overcrowd your grill pan because what’s gonna happen is the eggplant slices or whatever you’re cooking it’s gonna start to stew cuz the pans gonna cool down rather than sear and trap all the gorgeous flavors inside they’ve made about 3 to 5 minutes I’m gonna brush the other side of these eggplant with the olive oil if you’ve got this char grill marks on one side they’re ready to go these are perfect quarter the tomatoes remove the seeds and dice add spring onions and meat little trick I’m gonna fold these over and then really start shredding nice and fine and you get the beautiful thin strip of perfect julienne mint and look how beautiful and delicate this looks perfect fine shredded mint I’m gonna put most of that into my bowl 3/4 of it save 1/4 to garnish the final dish said it needs to be really cold because it’s gonna help you get a perfect crumble I’ve got about 100 grams of soft fatty here and I’m just gonna crumble it straight into this filling in a season if it’s generous amount of salt and likewise with pepper colors are absolutely beautiful I just love feta ah that’s so beautiful in Seoul teeth I’m gonna lay my eggplant two on top of each other and then top each with a tomato a feta mixture and it’s such a great alternate to planning on tomato bruschetta your vegetarian friends are gonna love you for this one last garnish with the beautiful mint that we reserved earlier and always some extra virgin olive oil to finish this dish just a dash of balsamic vinegar there you have it simply stunning eggplant bruschetta with tomato mint and feta be sure to like the Woolworths Facebook page and get updates as new recipes become available click on any of these other dishes for more great value classic recipes all ingredients can be purchased at your local Woolies and online everything you need to bring Christmas together is just around the corner at Wally’s
