1/2 onion sauteed with 1tbsp minced garlic. Added cumin, chili powder, salt, pepper, and turmeric. Bloomed spices then added 1 can diced tomatoes (drained just a bit). Once hot I made a little well for each egg and broke them in. Covered for about 7 minutes (go less if you want a runny yolk). Under 300cal so I added a light english muffin and about a tsp of Louisiana hot sauce bringing total to ~370cal.
