The original recipe is from a cookbook called Bowls by America’s Test Kitchen. I love their recipes, but they’re always adding a ton of oil to everything. I doubled the tofu (which I air fried) and replaced the oil in the vinaigrette with hydrated chia seeds. So good!
To air fry tofu: cube it, press it, salt it, and then put it in the air fryer at 350. Jostle it every 10 minutes, and cook for a total of 20-30 minutes.
To use chia as an oil substitute in salad dressing: mix 1 tsp chia (about 4g) with 3 tbsp water and let sit until it gels, about 10 minutes. Then use as a 1-1 replacement for the oil. It has like 8 calories per tbsp.
