Turns out in the Tesco near me, lean steak mince is lower in calories than lean turkey mince and as a red meat lover, I'll always choose beef if I can!
Recipie:
Halve the bell peppers and spray with fry lite. Cook them for 20 minutes at 200°c in the oven. Whilst those are cooking, brown your onions in the pan (I had to use much less than I wanted because I was running low but I reccomend a minimum of 150g of onion for two portions) with some cumin and smoked paprika. Add the beef and brown slightly before adding two packets of taco seasoning (make your own blend if you'd like), garlic salt, onion granules, some chilli flakes and chilli powder plus a splash of water. By the time everything is done cooking on the stove, the peppers should be out of the oven. Fill the peppers with your beef and onion mixture and top with cheese. I used 80g of 50% fat cheddar for all four whole bell peppers/eight halves. Put back in the oven for 15 minutes so the cheese goes slightly crispy and then serve. Full of flavour and very filling!
Macros: 17g carbs, 70g protein, 20g fat.
