My favourite is veggies. Onions, mushrooms, peppers, zucchini and whatever else marinaded in soy and stuff.

    Crispy Pork Belly (no rind)
Salt/pepper and clamp it in the basket. Bank the coals and add a drip tray directly under the belly. Spin indirectly at 350° or so for 90 minutes. Damper right down and continue for a half hour while the sides are prepped.
I serve it sliced with Korean style dipping sauces.
The drip tray is really important to avoid flare-ups and a greasy mess in your Joe.

Costco has had the best skinless pork belly hands down this year.
You can get all fancy with rubs but for guaranteed success, I keep it simple with salt and pepper as the crispy pork belly with the side sauce has always been foolproof and earned a spot in my rotation.
This recipe works well with marinated butterfield pork butts too.
We have a party coming up and a couple of rotisserie pork bellies will be a hit.
Tip: The rotisserie baskets can rub on the firebox ring so I dry fit beforehand on the rod and mark the placement with a Sharpie for a quick install into the motor.

You could throw anything in there and it will probably be awesome. I don’t have the Joetisserie of the basket but here are some thoughts:
    – roasted peppers, onion, tomato and then make salsa for days
    – roasted potatoes with the skin on
    – chicken wings
    – a fatty piece of meat on one side and something to soak the fat up on the other side

I have another basket with small holes. Can add whole garlic cloves. My favorites are corn cobb halved, red potatoes, and when they are near done add thick sliced kiabasa & garlic cloves or a take on seafood boil very near the end add shrimp. Wings are a given. I’ve added a Cornish hens (can spear them with the kebab thing inside the basket so hens stay center) or chicken drumsticks/thighs. Done ribletts cut individual and tossed in similar veggies like huge cut onion & bell pepper for a fast over the fire fries when they get coated with the fats from the meat. Season right through the basket as it spins on the grill or pre oil and tossed in a bowl. Did rib racks tied to the basket but wasn’t worth the effort in my opinion.

Everything marinated… Like chicken wing for instance.

How do you stop the wings from sticking to the sides of the basket?

  7. Can you stuff a prime rib in that basket?
