I was just trying to make a quick thing and use up my spinach. But the chopped veggies looked beautiful and then it turned out to be the best saag I’ve ever made. The secret is, as always, measure with your heart, not according to recipe lol.

Recipe – first temper a good couple tablespoons of cumin seeds, I used coconut oil. Then add the chopped veggies – garlic, shallot, onion, jalapeño, ginger – as well as salt, turmeric & garam masala. When the veggies get soft, add the spinach until it wilts. Then put everything in the food processor and blend until smooth.
Reheat the pan, add more oil and cubed tofu, more turmeric and salt. Brown the tofu. Then add the saag sauce to tofu. Finish with another pinch of salt, a splash of lemon juice, and pinch of garam masala.
I topped with cashew cream, just boiled cashews & water with a pinch of salt & lemon juice.
Yum! Just jumping in to say: if you’re a fan of paneer dishes, try the brand “Pumfu” .. it’s a tofu-like food made from pumpkin seeds and it’s my FAV paneer sub. Just don’t be turned off by the fact that it’s green lol
