What am I looking for when picking?

    I’d say no, but that’s personal preference because Jalapeños are used in a whole range of ripeness, so it’s a little hard to answer your question definitively…

    Green jalapeños are technically unripe, picked just a bit after reaching full size, but before they start changing to their final ripened color. They’ll usually be a little bit darker green than this before being picked.

    If you leave them on a little bit longer, they’ll start to change to red, and their flavor will change a bit, a little sweeter.

    You can pick them at any point between reaching full size and full ripeness. It’s all up to what sort of flavor profile you want!

  2. You can pick them whenever you want – for stores and market they are mostly picked while still green but if you leave them on the plant they become red and a little hotter, but flavor-wise full developed

    If picking green, they are ready when you pull up on them and they easily snap off on their own.

    Outside of that, pick when you want and what color you want it! I will mark any I want to turn red and then routinely pick a few green every day so it encourages more growth.

    I pick a couple green ones as needed, but let the rest ripen.

    I love a fresh, green jalepeño. But I prefer a ripened pepper.

    Pick them all and she’s going to throw a bunch of flowers then the second set let those ripen.

    If you want them to be hot, wait until they have the white “stretch marks” that is when they reach full potential
