T H E R E C I P E:
🥕 Here is what you need:
1 kg carrots
1 tbsp coconut oil
salt and pepper to taste
(for the best marinade)
2 tbsp maple syrup
5 tbsp balsamic vinegar
1 tbsp coconut oil
+ fresh parsley or coriander (if you like)
🥕 What to do with all this?
1️⃣ Peel and chop the carrots (2,5cm long and halved pieces).
2️⃣ Place on the baking tray covered with parchment paper, drizzle with coconut oil, sprinkle with salt and pepper and mix.
3️⃣ Roast at 180C/360F for 30 minutes or until soft stirring occasionally.
4️⃣ Mix balsamic vinegar and maple syrup in a pot, boil while stirring non-stop for a couple of minutes and mix coconut oil in.
5️⃣ Cover the carrots with the marinade, sprinkle with fresh parsley or coriander, serve warm.
