I am plying around with time/temp a bit. Did this 30 min in a pre heated (450F) Dutch oven then transferred it to a baking sheet for 10 more minutes. Dead center was 210F and it felt great so I took it out. I can feel it's softer which is what I was going for. I like the blonde color, will cut it tomorrow
