Sorry this is going to be a long one. My wife promised to get me a smoker when we finally bought a house. This past week she got me this really nice Pit Boss 5 series vertical smoker from tractor supply. It’s really easy to use and has a huge amount of space inside it. I used a bag of Bear Mountain gourmet pellets since they got mentioned quite a bit on here.
First night I did some chicken wings cause I figured it would be a good test to get acclimated with it. I tossed the wings in a little baking powder first after patting them dry with paper towels. Used this B2 killer bee sting dry rub which gave them such a nice sweet bite. Smoked them at 250 for 30 min then cranked up the heat to 425 for a final 10 min to crisp up the skin. Came out juicy as anything and got the thumbs up from the wife.
Then yesterday was the true test. The in-laws were coming over and I got the request of ribs. Did a bunch of research on here and YouTube cause didn’t want to disappoint the family. I made my own rub using a recipe I found online cause nothing I had premade tasted the way I wanted it. So after cleaning and prepping these baby backs I rubbed down with yellow mustard and then my rub. Did the ribs at 250 for 3 hours first. I know that wrapping them seems to be mixed but my FIL said he does it that way. I prepped the foil wraps with dark brown sugar, apple juice, and Mikes hot honey. Laid the meat sides down, double wrapped them, back into the smoker they went for another hour or so. They passed the bendy test so I turned the smoker up to 300 and put them back in there unwrapped for 45 min. When I pulled them out it was pure magic. I couldn’t believe how delicious these came out. Even got decent color on them if I do say so myself.
The whole family seemed to enjoy them. My FIL seemed pretty impressed, went for seconds so that says something. I sent them home with some leftovers and got a text from my SIL saying how they were better than her Dad’s. Y’all that put the biggest shit eating grin on my face. 🤣 Thanks for reading can’t wait to continue experimenting.
