So after trimming and smoking for like 15 hours, I'm left with this after draining off the useable tallow. What actually is this?

    Same as the part of crispy bacon after you fry it and drain all the fat except no cured flavor. It could have nice delicate crispy texture but has no taste to it and makes you want to spit it out. I’ve wondered that when rendering brisket fat and pork shoulder and pork belly fat so I tried it and it had no taste to it. Just crispy fat.
